Home brewing doesn't just have to be about kits, the great thing is that with a few ingredients and some home brewing equipment, you can make pretty much anything you want. Fancy making your own American-style pale ale, with bags of citrus hop flavour? All you need are the right hops, grains and yeast. Want to turn that glut of rhubarb into a summer wine? Just add some sugar, yeast and water and in a couple of months, you'll have your very own fruit wine.
When it comes to wine and cider, you don't even need your own apple tree, or grapes. Country wines can be made from pretty much anything which has some natural sugar content (even nettles!), while fruit juices and apple juice can easily be turned into decent wines and ciders.
Most recipes will use measurements to make 1 gallon of wine or cider (i.e a demijohn), which can simply be scaled up if you wish to make larger quantities. Beer recipes will normal be for 5 gallons (23 litres), unless otherwise stated.
