Black malt has been kilned at very high temperatures to almost char the grains. It is generally used in very dark beer styles, such as porters and stouts to give the deep brown and black colour, but it also adds a strong roasted flavour as well as heavy fruit notes. Black malt has a "drying" effect so can be used to balance sweetness as well as bringing out a vinous quality in your beer. Black malt has no diastic activity and does not add any fermentables to the wort, it is simply used for colour.

Can be steeped when brewing with malt extract.
