Campden tablets (Sodium Metabisulphite) are used in home brewing, to kill bacteria, inhibit the growth of wild yeasts and can also be used as a chlorine neutraliser. Campden tablets are typically used when racking (siphoning) wine, to protect against oxidation, with one tablet being used per gallon. When making fruit-based country wines, or cider, Campden tablets can be used to inhibit wild yeast growth, simply add to the juice of the fruit, before using in the wine or cider.
To neutralise chlorine in tap water, add one Campden tablet per 20 litres of water, before the water is used for brewing.
