Cascade SMaSH (Single Malt and Single Hop) - Extract RecipeThis is a simple recipe for producing an American-style pale ale, with basic ingredients. The finished beer will be very pale (7.4 EBC), fairly bitter (40.2 IBUs), be around 4.8% ABV and have a spicy, floral and grapefruit character. You can substitute the Cascade for any other hop with a similar Alpha, such as Centennial or Amarillo. You can make this beer using either dry or liquid extract. If using liquid extract, you need approx 20% by weight more than dry extract, due to the water content.
The advantage of extract brewing is that you don't need to boil up the full 23 litres of wort. Using a smaller pot, you can boil up a fraction of the total volume, then dilute to full volume once in the fermenter. If boiling a partial volume, you must split the extract proportionally, or you will not achieve the correct bitterness from your hops. This recipe is based on a 15 litre stock pot on a hob, boiling 9 litres of liquid, however, you can use a smaller or larger pot, if you prefer. If you use a different sized pot, you will need to adjust the amounts of extract you add at each stage in proportion to the difference in size to the 15 litre pot used here.
Ingredients for a 23 litre batch
- 3kg Dry Malt Extract or 3.5kg of Liquid malt Extract
- 100g Cascade
- Irish Moss / Protofloc
- Mangrove Jack's M44 US West Coast, or Safale US-05 yeast
MethodBring 9 litres of water to the boil and add 1kg of the light extract, or 1.3kg of liquid malt extract.
As soon as the wort begins to boil again, add 25g of cascade.
After 45 minutes add the Irish Moss / Protofloc, remaining dry or liquid extract and 15g of Cascade
Bring back to boil, wait 5 mins, then add 20g Cascade
Wait another 5 mins then add another 20g Cascade
Wait 3 mins then add the last 20g of Cascade and allow to steep after the boil finishes.
Cool the wort, transfer to a fermentation vessel, top up to 23 litres with cool water and pitch the yeast.
